About Us

Mala Xiang Guo, also known as the Spicy Fragrant Pot, originates from Southwest China. Its history dates back to the Ming and Qing dynasties, when dock workers and boatmen in Sichuan and Chongqing cooked various ingredients together in one pot, flavored with local spicy seasonings. This cost-effective and time-saving cooking method quickly gained popularity among the laborers, laying the foundation for the Mala Xiang Guo we know today. 
麻辣香锅,又称“香辣锅”,起源于中国西南地区。其历史可以追溯到明清时期,当时四川和重庆的码头工人和船夫将各种食材放在同一锅中烹煮,并加入当地的辛辣调料调味。这种省时又经济的烹饪方式迅速在劳动者中流行开来,也奠定了我们今天所熟知的麻辣香锅的基础。

Wei Yazhou

Wei Yazhou, affectionately known as “Xiaobao,” is the founder and head chef of Ju Bao Xuan. Coming from a family deeply rooted in culinary tradition, Xiaobao has earned numerous prestigious accolades, including the titles of “Chinese Culinary Master,” “China’s Golden Chef Award,” and “Singapore Food Masters WINNER.” A visionary in the culinary world, Xiaobao has participated in international cooking competitions and food exchange programs, promoting Chinese food culture on a global stage. His innovative Mala Xiang Guo has become the signature dish of Ju Bao Xuan, captivating the taste buds of diners.

Food Master

To perfect the taste of Mala Xiang Guo, Xiaobao embarked on a journey through Sichuan and Chongqing, delving into the heart of China's culinary traditions. Starting in Pixian, Sichuan—renowned as the "Hometown of Doubanjiang (fermented bean paste)"—Xiaobao meticulouslyselected the finest chili peppers and learned the intricate techniques of Doubanjiang production from local artisans. His next stop was Chongqing, the mountain city celebrated for its bold and fiery flavors. There, Xiaobao trained with seasoned Mala Xiang Guo masters, discovering that a superior base requires not only a spicy kick but also a complex, layered aroma. Through countless trials and meticulous adjustments, he developed Ju Bao Xuan's unique secret base sauce, made with over 40 spices and 10 traditional Chinese medicinal ingredients, slow-cooked for nine hours to achieve the perfect balance of spicy and fragrant. This base sauce represents the culmination of Xiaobao’ s dedication and craftsmanship, combining organic ingredients with a commitment o roviding diners with a “spicy but not overly hot” dining experience.
